The olives are picked early, when they have the most healing power and are still green. This is followed by a quick, cold extraction in less than 24 hours, which is key to maintaining quality. The result is an extremely low acidity (0.2-0.4%), which is well below the EU standard (0.8% for EVOO), ensuring that the oil remains fresh and stable for much longer.

BITTERNESS = HEALTH AND POLYPHENOLS
The original bitterness and spiciness are not a defect, but a natural antioxidant shield. This taste is a testament to the exceptional freshness and high content of polyphenols (typically 450-600 mg/kg), which are essential for your health. The European Food Safety Authority (EFSA) confirms that polyphenols help protect blood lipids from oxidative stress.

Laboratory tests confirm the oil's freshness and the strength of its antioxidant shield, and a sensory panel verifies it to be flawless. Bittergreen contains exceptionally high levels of polyphenols – two to three times more than the average extra virgin oil. These natural antioxidants protect cells and contribute to heart health.
Low acidity further confirms proper processing and stability: less degraded fats, more shelf life and a flavor that remains alive even weeks after opening. Our values are well below the official limit for extra virgin oil – scientific and sensory proof that every bottle is truly fresh.


DOUBLE GUARANTEE: IGP TOSCANO & ORGANIC
Authenticity is based on two certificates that prove the truth in every bottle. IGP Toscano is a legal guarantee of origin: the olives are grown and pressed exclusively in Tuscany, and each batch is confirmed by a laboratory test and a sensory taste evaluation. The EU organic certificate guarantees production without pesticides, herbicides and compromises.
